Below are easy steps on how to roast plantain on a stove in your frying pan. Bole is a roasted plantain, it is a portion of street food in Nigeria where sellers are seen by roadsides in major cities, especially at night, roasted fairly ripe plantains with hot coals and selling with fish or pepper sauce.

I roasted the plantain on a stovetop, in a griddle pan and it was awesome but when I saw Chef Kelechi Okorie’s roasted plantain recipe in Foodies’ Facebook group So you think you can cook, couldn’t resist trying it with some pepper sauce. It’s very easy yet delicious. Your fry pan or any heavy base pot can be used to roast plantain like this. Just remember to wrap in foil or baking paper to retain the heat and enable it to cook through.
INGREDIENTS: Ripe, fairly ripe or unripe plantain Foil Palm oil Salt PROCEDURE: 1. Peel the plantain 2. Sear or make incisions with your kitchen knife. 3. Rub palm oil and salt on the plantain. 4. Wrap with foil and place on the frying pan, cover the pan with a lid. 5. Turn on the heat and let it cook slowly. Be checking to know when it’s brown and avoid burning. 6. Bring out and serve hot with pepper sauce or grilled fish. If after removing the foil, you still want it o cook more, you can just place foil in the pan, place the side of the plantain that you need to cook more on the foil and cover with a lid, you can repeat till all the sides are brown or as you like it. Enjoy the hot bole! Now we can make bole in our kitchens and enjoy it. I’ll try using this method to roast yam and potatoes, will let you guys know how it turned out.
