The best yam to use for raw blender fufu is the white yam that doesn’t change colour after cutting. The puna also called Ada Onitsha in some parts of Nigeria. Every Nigerian tribe has it’s name for that special white yam that doesn’t fail when used for
pounded yam, yam porridge or even boiled yam with palm oil/ sauce. There are other types too that change just a little and there are those that can change to complete brown or black if left exposed for some time.
It’s good to know the different types of yams because yam sellers are careful when they see that you know yams, if you depend on what they tell you sorry. Most yam sellers in Abuja cannot be trusted, I don’t know about about parts.
Tell them you want white yam and instead of honestly telling the customer that what you need is not available, they go ahead and sell to you whatever yam they have and some don’t even taste good at all.
Some yams are great for pounding, like the Benue State yams, those ones produce very elastic even though hard fufu that needs you to add water over and over again while pounding.
Some yams are great for chewing but not too great for pounding. All in all, I’ll say that the white yam shown above is excellent for both pounding and chewing.
It has a texture that makes you enjoy chewing and even while pounding, it’d aroma is so tempting you want to eat all the yams in the pot before pounding is done.

TYPES OF YAMS IN NIGERIA
- The water yam; used for ekpang kwukwor and ikokore.
- The wild yam boiled and sold at markets with pepper sauce. They are yellowish kind of and very delicious to those who know them.
- The cocoyams used for cooking bitter leaf soup and also for cooking ekpang kwukwor.
- The white yam that doesn’t really grow too fat unless fertilizers are applied. Great for pounded yam, yam pottage, yam pepper soup for nursing mothers, and even boiling.
- The not so white yam that manages to change just a little.
- The no respecter of persons yam that starts changing colour even while you are still peeling it.
