HOW TO MAKE COCONUT FLAVORED NIGERIAN CHIN CHIN
INGREDIENTS FOR COCONUT MILK CHIN CHIN
6 cups all purpose flour
2 teaspoons grated nutmeg
Two teaspoons of salt
2 tablespoons butter or margarine
2 cups Sweetened coconut milk (500ml). (I diluted 2 sachets of coconut milk powder, sweetened with 6 tablespoons of sugar)
Oil for deep frying. I used soya oil.
DIRECTION
1. Add the sieved flour, nutmeg, salt in a bowl and mix.
2. Add the cooking margarine and mix with your fingers until it seems a bit like bread crumbs.
3. Add the sweetened coconut milk and mix into a dough, until your hands come out clean.
4. Place on a flat surface, with a rolling pin, flatten and cut into desired shape. We cut using a pizza cutter to make the cutting easier and faster with more even shapes.
5. Fry in hot oil till brown. The very brown ones are more crunchy (Not hard though), the light brown ones are less crunchy. If you like very crunchy chin chin, allow them to brown very well before removing from hot oil.
TIP:
1. If you are making much, and you don’t have a pastry cutter, use a pizza cutter to make your job easy and fast.
2. If you are making much, do not sprinkle with flour to roll and cut, rather grease your palms and the work area so that your frying oil doesn’t become cloudy with flour dust.
