MILLET SWALLOW RECIPE FROM SCRATCH
Today we learn how to make millet fufu from scratch.
Millet fufu swallow is made almost the same way as amala, tuwo and other ‘flour’ forms of swallow (fufu).
First mix a little quantity with cold water. Make a verylightconsistency (watery).
Next Put on the stove or gas burner.
Then let it boil very well as you continue to stir. Boiling cooks the starch and helps your final swallow fufu to hold together.
Let the watery consistency boil and change in colour a little as if the starch is overcooked before you start pouring in more millet powder.
Continue stirring non stop and Sprinkling more millet flour to desired softness.
Once your desired softness is achieved, stop adding the millet flour and just keep stirring until it is cooked.
TIP TO GET VERY MOULDABLE MILLET SWALLOW FUFU
Remember to immediately wrap cooked millet fufu swallow in cling films or cellophane bags and leave for a few minutes.
That wrapping helps the millet swallow get even more mouldable and gives it a better texture. Don’t forget this Last step.
