This is our Nigerian yam porridge recipe. Cooked with green vegetables and titus fish also known as mackerel
Nigerian yam porridge recipe, cooked with smoked mackerel and green vegetables. Easy recipe. Dinner is served.
INGREDIENTS:
- 1 tuber yam
- small bunch green vegetables (amaranth/aleho)
- 2 large bulbs onion
- Palm oil
- 2 smoked mackerel
- Salt
- Knorr beef seasoning
- Fresh pepper
- Water
COOKING DIRECTION FOR NIGERIAN YAM PORRIDGE:
- First, I stir fried enough onion, pepper and seasoning cubes in palm oil until onion is translucent.
- Added water, yam and washed smoked fish. Checked for salt and seasoning if they are ok, covered to cook while I stir often until yam is cooked and thickens.
- The fish is taken out before adding vegetables so it doesn’t crumble with stirring and mixing. After mixing vegetables well, the fish is returned to the pot, stirred and allowed to simmer a for about 20 seconds before turning off the heat and serving.
