Good Nigerian tomato stew is easy to make but, not everyone knows the few tricks. Why most people love buka stews is because they give that well fried tomato stew flavour. From far you can tell that that is very good tasty.
Good tomato stew advertises itself. When you walk past a compound where correct Nigerian tomato stew is being cooked, you just know from the aroma. Same way sour/slappy/burnt tomato stew also announce themselves even before serving.

10 BEST INGREDIENTS FOR NIGERIAN RED TOMATO STEW
- Vegetable or groundnut oil
- Red onion (Much onion)
- Plum tomatoes
- Tomato Paste (Not much)
- Red bell peppers same quantity as tomatoes or more
- Green peppers ( Not much)
- Scotch bonnets
- Garlic ( very little )
- Ginger
- Well seasoned Beef stock or chicken or even goat meat stock or fish stock (Very Important!. Any other ingredient na jara.
With the 10 stew ingredients listed above, my Nigerian tomato stew is always a hit. Sometimes I leave out a few, sometimes I add a few others but the 10 ingredients above are the basic if you want good tasting tomato stew. Be careful with the garlic though.
Too much can turn your pot of stew to garlic stew and it’s very easy for garlic to overpower other ingredients. For my cooking, I never use more than a tiny clove of garlic. I also never add it to my stews unless it’s fried together with ginger and onion for that wonderful taste.
The only time I use garlic in my cooking without frying it first with garlic is when I add to meats to make great tasting stock.
