Healthy Plantain Porridge

 unripe plantain for porridge

Ingredients:

.6 Unripe plantain fingers
.2 large Smoked catfish
.1/4 cup ground Crayfish

 

.1/3 cup Palm oil

 

. Salt to taste

 

.2 Seasoning cubes

 

.1 tablespoon ground fresh Pepper (Scotch bonnet)

 

.1 very small bunch Ugu vegetables
 3 cups water to start with, you can always adjust during cooking.

 

 

Procedure for Healthy Plantain Porridge by Lizzy

  •  chop the plantain to your preferred size and add to boiling water.
  •  Washed catfish, salt, crayfish and seasoning

 

  •  Next, add blended onion and fresh pepper as well palm oil and leave to boil

 

  • stir and check if plantain is tender enough for you. When plantain is tender enough taste for salt and add if needed.

 

  • Add chopped ugu leaves, stir and turn off heat. Its ready to serve.
